First make sure that you have wl-clipboard package installed, then copy any text in for example web browser and run in kitty wl-paste to see if it outputs copied text.

For the screenshot, I'm guessing that you copied your configuration from somewhere and don't have all the tools installed that it uses, see your $HYPRSCRIPTS/screenshot.sh - if I had to guess you're going to need grimblast-git (from AUR), grim and swappy but see your screenshot script.

Have you tried copy-pasting any picture? How actually are you trying to make a screenshot?
Looking at your config u either using

  1. $mainMod, PRINT ( $HYPRSCRIPTS/screenshot.sh)
  2. $mainMod SHIFT, S ( $HYPRSCRIPTS/screenshot.sh)
    or
  3. F4 (io.elementary.screenshot)
So if you want to use screenshot.sh you should look at its content.
It's at ~/.config/hypr/scripts so you can just run
    cat ~/.config/hypr/scripts/screenshot.sh
